Creamy, cheesy, and spicy in all the right ways, this chicken spaghetti recipe is a weeknight winner using angel hair pasta.


Ingredients

  • 1 (12 ounce) package angel hair pasta
  • 2 cups chopped cooked chicken breast
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 (10 ounce) can diced tomatoes with green chile peppers
  • ¾ (8 ounce) package processed cheese, cubed
  • ½ (4 ounce) jar sliced mushrooms, drained
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of lightly salted water to a boil. Cook angel hair pasta until tender yet firm to the bite, about 4 to 5 minutes. Drain and return to pot.
  2. Add cooked chicken, condensed soup, diced tomatoes with chiles, cubed processed cheese, mushrooms, salt, and pepper.
  3. Stir over low heat until cheese melts and everything is heated through, about 5 minutes. Serve hot.

Notes

For extra creaminess, stir in a splash of milk while warming. Add peas or spinach for a nutritional boost. This recipe doubles easily and freezes well.
