For the Shrimp:
- 1 lb medium shrimp, peeled & deveined
- 1/2 cup cornstarch
- 2 eggs, beaten
- 1 cup panko breadcrumbs (or regular)
- Salt & pepper, to taste
- Oil for frying.
For the Honey Glaze:
- 1/4 cup honey
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 garlic clove, minced
- 1/2 teaspoon crushed red pepper flakes (optional)
Instructions
- Pat the shrimp dry and season with salt and pepper.
- Dredge each shrimp in cornstarch, dip into beaten eggs, and coat with breadcrumbs.
- Heat oil in a skillet over medium heat and fry shrimp until golden and crispy, about 2-3 minutes per side. Drain on paper towels.
- In a small saucepan, combine honey, soy sauce, rice vinegar, garlic, and red pepper flakes.
- Simmer for 2-3 minutes until slightly thickened.
- Toss the crispy shrimp in the warm honey glaze until well coated.
- Serve hot, garnished with green onions or sesame seeds if desired.
Notes
- For a lighter option, bake the shrimp at 400°F for 12-15 minutes.
- Adjust the spice level in the glaze by adding more or less red pepper flakes.
