For the Shrimp:

  • 1 lb medium shrimp, peeled & deveined
  • 1/2 cup cornstarch
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs (or regular)
  • Salt & pepper, to taste
  • Oil for frying.

For the Honey Glaze:

  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 garlic clove, minced
  • 1/2 teaspoon crushed red pepper flakes (optional)

Instructions

  1. Pat the shrimp dry and season with salt and pepper.
  2. Dredge each shrimp in cornstarch, dip into beaten eggs, and coat with breadcrumbs.
  3. Heat oil in a skillet over medium heat and fry shrimp until golden and crispy, about 2-3 minutes per side. Drain on paper towels.
  4. In a small saucepan, combine honey, soy sauce, rice vinegar, garlic, and red pepper flakes.
  5. Simmer for 2-3 minutes until slightly thickened.
  6. Toss the crispy shrimp in the warm honey glaze until well coated.
  7. Serve hot, garnished with green onions or sesame seeds if desired.

Notes

  • For a lighter option, bake the shrimp at 400°F for 12-15 minutes.
  • Adjust the spice level in the glaze by adding more or less red pepper flakes.
