Description

Ingredients

  • Whole wheat tortillas
  • Shredded cheddar or mozzarella cheese
  • Bell peppers, diced
  • Zucchini, diced
  • Spinach leaves
  • Onion, finely chopped
  • Olive oil or cooking spray
  • Salt, pepper, and optional spices (paprika, cumin)

Instructions

  1. Heat olive oil in a skillet over medium heat and sauté vegetables until softened.
  2. Place a tortilla in a clean skillet, sprinkle with cheese, and layer sautéed vegetables evenly.
  3. Top with another tortilla, press gently, and cook until the bottom is golden brown.
  4. Flip carefully and cook until the second side is crisp and cheese has melted.
  5. Remove, cut into wedges, and serve warm with salsa, guacamole, or Greek yogurt dip.
