  • 1 cup green beans, trimmed
  • 2 tbsp fish sauce (patis)
  • 1 tamarind soup mix packet or 1 cup fresh tamarind pulp
  • 6 cups water

Instructions

  1. Prepare the Pork: Rinse pork under cold water and cut into bite-size pieces.
  2. Boil the Meat: Combine pork, onion, tomatoes, and water in a large pot. Bring to a boil over medium-high heat, skimming off any foam.
  3. Add Vegetables: Once the pork is tender, add taro and cook for 10 minutes. Next, stir in radish, green beans, and water spinach.
  4. Season the Broth: Mix in tamarind soup mix or fresh pulp, then add fish sauce. Simmer for another 10 minutes to let the flavors meld.
  5. Taste and Adjust: Sample the broth and adjust sourness or saltiness to preference by adding more tamarind or fish sauce.
  6. Serve: Ladle hot Sinigang into bowls and enjoy with steamed white rice.
