Description

A creamy, flavor-packed one-pot pasta with Italian sausage, garlic, sun-dried tomatoes, and spinach. Ready in 30 minutes and perfect for busy weeknights.


Ingredients

  • Italian sausage (mild or spicy) – 1 lb (450 g)
  • Penne or rigatoni pasta – 12 oz (about 3 cups dry)
  • Olive oil – 1 tbsp
  • Garlic, minced – 4 cloves
  • Sun-dried tomatoes, chopped – ½ cup
  • Chicken broth – 2 cups (480 ml)
  • Heavy cream – 1 cup (240 ml)
  • Parmesan cheese, grated – ¾ cup
  • Italian seasoning – 1 tsp
  • Red pepper flakes – ¼ tsp (optional)
  • Baby spinach – 2 cups
  • Salt – ½ tsp (adjust to taste)
  • Black pepper – ¼ tsp

Instructions

  1. Heat olive oil in a large pot or deep skillet over medium heat.
  2. Add sausage and cook 5–6 minutes until browned, breaking it up as it cooks.
  3. Stir in garlic and sun-dried tomatoes. Cook 1 minute until fragrant.
  4. Add dry pasta, chicken broth, heavy cream, Italian seasoning, salt, and pepper. Stir well.
  5. Bring to a gentle boil. Reduce heat to medium-low. Cover and simmer 12–14 minutes, stirring occasionally, until pasta is tender.
  6. Stir in spinach and cook 1–2 minutes until wilted.
  7. Remove from heat and stir in parmesan until creamy and smooth.
  8. Taste and adjust seasoning. Serve immediately.

Notes

  • Use turkey sausage for lighter version.
  • Add mushrooms for extra depth.
  • Reheat with extra broth.
