Description
A creamy, flavor-packed one-pot pasta with Italian sausage, garlic, sun-dried tomatoes, and spinach. Ready in 30 minutes and perfect for busy weeknights.
Ingredients
- Italian sausage (mild or spicy) – 1 lb (450 g)
- Penne or rigatoni pasta – 12 oz (about 3 cups dry)
- Olive oil – 1 tbsp
- Garlic, minced – 4 cloves
- Sun-dried tomatoes, chopped – ½ cup
- Chicken broth – 2 cups (480 ml)
- Heavy cream – 1 cup (240 ml)
- Parmesan cheese, grated – ¾ cup
- Italian seasoning – 1 tsp
- Red pepper flakes – ¼ tsp (optional)
- Baby spinach – 2 cups
- Salt – ½ tsp (adjust to taste)
- Black pepper – ¼ tsp
Instructions
- Heat olive oil in a large pot or deep skillet over medium heat.
- Add sausage and cook 5–6 minutes until browned, breaking it up as it cooks.
- Stir in garlic and sun-dried tomatoes. Cook 1 minute until fragrant.
- Add dry pasta, chicken broth, heavy cream, Italian seasoning, salt, and pepper. Stir well.
- Bring to a gentle boil. Reduce heat to medium-low. Cover and simmer 12–14 minutes, stirring occasionally, until pasta is tender.
- Stir in spinach and cook 1–2 minutes until wilted.
- Remove from heat and stir in parmesan until creamy and smooth.
- Taste and adjust seasoning. Serve immediately.
Notes
- Use turkey sausage for lighter version.
- Add mushrooms for extra depth.
- Reheat with extra broth.
