Description

A fresh Mediterranean bowl and healthy ground beef recipe with seasoned beef, creamy tzatziki sauce, and crunchy cucumber tomato salad. Perfect quick dinner, easy weeknight dinner, high protein dinner, and meal prep dinner.


Ingredients

  • 1 tbsp olive oil
  • 2 tsp garlic powder (or 2 cloves garlic, minced)
  • 1 tsp dried oregano
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups cooked rice, quinoa, or couscous (or greens for lower carb)

Cucumber tomato salad:

  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thin sliced
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • Pinch of salt

Quick tzatziki:

  • 1 cup plain Greek yogurt
  • 1/2 cup grated cucumber, squeezed dry
  • 1 tbsp lemon juice
  • 1 small garlic clove, minced (or 1/2 tsp garlic powder)
  • 1 tbsp chopped dill (or mint)
  • 1/2 tsp salt

Optional:

  • feta, olives, parsley, lemon wedges

Instructions

  1. Make tzatziki: Mix Greek yogurt, grated cucumber, lemon juice, garlic, dill, and salt. Chill while you cook.
  2. Make salad: Toss cucumber, tomatoes, red onion, olive oil, lemon juice, and salt. Set aside.
  3. Cook beef: Heat olive oil in a skillet over medium-high. Add ground beef and cook 5–7 minutes until browned. Drain if needed.
  4. Season: Stir in garlic powder, oregano, cumin, paprika, salt, and pepper. Cook 1 minute.
  5. Assemble bowls: Add rice/quinoa (or greens), top with seasoned beef, cucumber tomato salad, and a big spoon of tzatziki. Finish with feta/olives if you want.
