Description

Maple Dijon Chicken and Sweet Potato Bowls are ideal for a weeknight dinner because they balance bold flavor with simple cooking. The maple syrup adds warmth and sweetness while Dijon mustard delivers tang, creating a sauce that tastes complex but comes together quickly. 


Ingredients

For the Chicken:

  • Boneless skinless chicken breasts or thighs – 1 lb
  • Olive oil – 1 tbsp
  • Dijon mustard – 2 tbsp
  • Pure maple syrup – 2 tbsp
  • Garlic, minced – 2 cloves
  • Smoked paprika – ½ tsp
  • Salt – ½ tsp
  • Black pepper – ¼ tsp

For the Sweet Potatoes:

  • Sweet potatoes, peeled and cubed – 2 medium
  • Olive oil – 1 tbsp
  • Ground cinnamon – ¼ tsp
  • Salt – ¼ tsp

Optional Bowl Add-Ins:

  • Baby spinach or arugula
  • Cooked quinoa or rice
  • Crumbled feta or goat cheese
  • Toasted pecans or walnuts

Instructions

Roast the sweet potatoes

  • Preheat oven to 425°F.
  • Toss sweet potatoes with olive oil, cinnamon, and salt.
  • Spread on a baking sheet and roast 25–30 minutes, flipping once, until tender and caramelized.

Make the maple Dijon glaze

  • In a bowl, whisk Dijon mustard, maple syrup, garlic, smoked paprika, salt, and pepper until smooth.

Cook the chicken

  • Heat olive oil in a skillet over medium heat.
  • Add chicken and cook 4–5 minutes per side until golden and cooked through.
  • Brush generously with maple Dijon glaze during the last 2 minutes, allowing it to lightly caramelize.

Assemble the bowls

  • Slice chicken.
  • Divide sweet potatoes into bowls.
  • Add chicken and optional greens, grains, cheese, or nuts.
  • Serve warm.
