Ingredients
For the Chicken:
- Boneless skinless chicken breasts or thighs – 1 lb
- Olive oil – 1 tbsp
- Dijon mustard – 2 tbsp
- Pure maple syrup – 2 tbsp
- Garlic, minced – 2 cloves
- Smoked paprika – ½ tsp
- Salt – ½ tsp
- Black pepper – ¼ tsp
For the Sweet Potatoes:
- Sweet potatoes, peeled and cubed – 2 medium
- Olive oil – 1 tbsp
- Ground cinnamon – ¼ tsp
- Salt – ¼ tsp

- Cooked quinoa or rice
- Crumbled feta or goat cheese
- Toasted pecans or walnuts
Instructions
Roast the sweet potatoes
- Preheat oven to 425°F.
- Toss sweet potatoes with olive oil, cinnamon, and salt.
- Spread on a baking sheet and roast 25–30 minutes, flipping once, until tender and caramelized.
Make the maple Dijon glaze
- In a bowl, whisk Dijon mustard, maple syrup, garlic, smoked paprika, salt, and pepper until smooth.
Cook the chicken
- Heat olive oil in a skillet over medium heat.
- Add chicken and cook 4–5 minutes per side until golden and cooked through.
- Brush generously with maple Dijon glaze during the last 2 minutes, allowing it to lightly caramelize.
Assemble the bowls
- Slice chicken.
- Divide sweet potatoes into bowls.
- Add chicken and optional greens, grains, cheese, or nuts.
- Serve warm.
