  • 1 cup cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced (optional)
  • 1/2 cup shredded carrots (optional)
  • 1/4 cup crumbled feta (optional)
  • 1/4 cup sliced red onion (optional)
  • Quick drizzle:
    • 1/4 cup plain Greek yogurt
    • 1 tablespoon olive oil
    • 1 tablespoon lemon juice
    • 1 teaspoon honey
    • 1/4 teaspoon salt
    • 1 tablespoon water to thin
  • Optional crunchy topping:
    • 1/4 cup crushed tortilla strips
    • roasted chickpeas

Instructions

  1. Pat chicken dry and season with salt, pepper, and garlic powder.
  2. Heat oil in a large skillet over medium-high heat.
  3. Cook chicken 6 to 8 minutes, stirring occasionally, until browned and cooked through to 165Β°F.
  4. Lower heat to medium-low and add butter.
  5. Stir in hot honey, lemon juice, and Dijon (optional) and simmer 30 to 60 seconds until glossy.
  6. Toss chicken in the glaze until coated.
  7. Whisk Greek yogurt, olive oil, lemon juice, honey, salt, and water to make a drizzle.
  8. Divide greens into bowls and add cucumber, tomatoes, and other toppings.
  9. Top with hot honey chicken and drizzle sauce over the salad.
  10. Finish with optional crunch and serve immediately.
