Instructions
- Pat chicken dry and season with salt, pepper, and garlic powder.
- Heat oil in a large skillet over medium-high heat.
- Cook chicken 6 to 8 minutes, stirring occasionally, until browned and cooked through to 165Β°F.
- Lower heat to medium-low and add butter.
- Stir in hot honey, lemon juice, and Dijon (optional) and simmer 30 to 60 seconds until glossy.
- Toss chicken in the glaze until coated.
- Whisk Greek yogurt, olive oil, lemon juice, honey, salt, and water to make a drizzle.
- Divide greens into bowls and add cucumber, tomatoes, and other toppings.
- Top with hot honey chicken and drizzle sauce over the salad.
- Finish with optional crunch and serve immediately.
