Ingredients

  • Boneless skinless chicken breasts or thighs – 1½ lb (680 g)
  • Olive oil – 1 tbsp
  • Yellow onion, finely chopped – 1 medium
  • 3 Garlic cloves, minced
  • Low-sodium chicken broth – 4 cups (960 ml)
  • Canned green chiles, drained – 2 cans (4 oz / 115 g each)
  • Ground cumin – 1 tsp
  • Dried oregano – ½ tsp
  • Kosher salt – 1 tsp
  • Black pepper – ½ tsp
  • Heavy cream or half-and-half – ¾ cup (180 ml)
  • Cream cheese (optional) – 3 oz (85 g)
  • Fresh lime juice – 1 tbsp
  • Optional toppings:
    Cilantro
    Monterey Jack or pepper jack cheese
    Avocado
    Tortilla strips

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook 3–4 minutes until soft.
  3. Stir in garlic and cook 30 seconds until fragrant.
  4. Add chicken and season with salt, pepper, cumin, and oregano.
  5. Pour in broth and add green chiles. Stir gently.
  6. Cover and simmer 15–18 minutes until chicken is cooked.
  7. Remove chicken, shred, and return to pot.
  8. Reduce heat to low and stir in cream.
  9. Add cream cheese if using and stir until melted.
  10. Stir in lime juice. Simmer 3–5 minutes.
  11. Serve hot with desired toppings.

Notes

  • For a lighter healthy dinner, use half-and-half instead of heavy cream.
  • Freeze without toppings for best texture.
  • Spice level can be adjusted with hot green chiles or chili flakes.
