- Yellow onion, finely chopped – 1 medium
- 3 Garlic cloves, minced
- Low-sodium chicken broth – 4 cups (960 ml)
- Canned green chiles, drained – 2 cans (4 oz / 115 g each)
- Ground cumin – 1 tsp
- Dried oregano – ½ tsp
- Kosher salt – 1 tsp
- Black pepper – ½ tsp
- Heavy cream or half-and-half – ¾ cup (180 ml)
- Cream cheese (optional) – 3 oz (85 g)
- Fresh lime juice – 1 tbsp

Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and cook 3–4 minutes until soft.
- Stir in garlic and cook 30 seconds until fragrant.
- Add chicken and season with salt, pepper, cumin, and oregano.
- Pour in broth and add green chiles. Stir gently.
- Cover and simmer 15–18 minutes until chicken is cooked.
- Remove chicken, shred, and return to pot.
- Reduce heat to low and stir in cream.
- Add cream cheese if using and stir until melted.
- Stir in lime juice. Simmer 3–5 minutes.
- Serve hot with desired toppings.
Notes
- For a lighter healthy dinner, use half-and-half instead of heavy cream.
- Freeze without toppings for best texture.
