A fast one-pan noodle dinner with butter, gochujang, garlic, soy sauce, and a glossy spicy-sweet finish.

- 12 ounces spaghetti or linguine
- 4 tablespoons unsalted butter
- 4 garlic cloves, minced
- 2 tablespoons gochujang
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1/4 teaspoon black pepper
- 1/3 cup reserved pasta water
- 2 green onions, sliced
- 1 teaspoon sesame seeds, optional
- 1 fried egg per serving, optional
Instructions

- Boil noodles in salted water until al dente.
- Reserve 1/3 cup pasta water, then drain.
- Melt butter in the same pan or a skillet over medium-low heat.
- Add garlic and cook 30 seconds until fragrant.
- Stir in gochujang, soy sauce, honey, rice vinegar, sesame oil, and black pepper.
- Add pasta water and stir until smooth.
- Toss in the hot noodles until fully coated.
- Cook 1 to 2 minutes until glossy.
- Top with green onions, sesame seeds, and a fried egg if desired.
Notes
- Do not brown the garlic or the sauce can taste bitter. A recent review of Eric Kimβs buttered gochujang noodles also highlights gently cooking the garlic in butter first.
- Reserve the pasta water before draining because it helps the sauce come together smoothly.
- Use less gochujang for a milder version.
- A fried egg makes the noodles even richer and more filling.
- Serve immediately for the glossiest texture.
