Description
Slow cooker taco meat made with crockpot ground beef, black beans, corn, and tomatoes, served as taco beef bowls with rice and fresh toppings. Perfect family dinner, meal prep bowls, high protein dinner, and freezer friendly.
Ingredients

- 1 1/2 lbs ground beef
- 1 tbsp olive oil (optional, for browning)
- 1 onion, diced
- 3 cloves garlic, minced
- 2 tbsp taco seasoning
- 1 tsp cumin
- 1/2 tsp smoked paprika
- 1 (15 oz) can diced tomatoes (or Rotel), undrained
- 1 (15 oz) can black beans, drained and rinsed
- 1 cup corn (frozen or canned, drained)
- 1/2 cup beef broth (or water)
- Salt + black pepper
For serving:

3–4 cups cooked rice (or cauliflower rice), shredded lettuce, shredded cheese, salsa, cilantro, lime wedges, avocado (optional)
Instructions
- Optional but better flavor: Brown the ground beef in a skillet over medium-high heat 5–7 minutes. Drain excess fat.
- Add beef to the crockpot with onion, garlic, taco seasoning, cumin, paprika, diced tomatoes, black beans, corn, and broth. Stir.
- Cook on LOW 3–4 hours (or HIGH 2–3 hours), until flavors are well combined and onions are tender.
- Taste and adjust salt/pepper. If it looks too saucy, leave lid off 10–15 minutes on HIGH to thicken.
- Assemble bowls with rice (or lettuce/cauliflower rice), then spoon taco beef mixture on top. Add toppings.
Notes
- Freezer friendly: Cool the taco beef mixture fully, then freeze in airtight containers up to 2–3 months.
- Meal prep bowls: Store beef separate from lettuce and toppings so everything stays fresh.
- Healthy dinner tip: Use lean beef, drain well, and serve with cauliflower rice and extra lettuce.
