Bright, garlicky crockpot lemon chicken with broccoli, carrots, and a light citrus sauce—an easy high-protein slow cooker dinner.

- 1½ lb boneless skinless chicken breasts or thighs
- 1 tsp kosher salt, ½ tsp black pepper
- 1 tsp Italian seasoning or dried oregano
- ½ tsp paprika or chili flakes optional
- 4 garlic cloves minced
- Zest of 1 lemon
- ¼ cup fresh lemon juice
- ½ cup low-sodium chicken broth
- 1 tbsp olive oil
- 2 cups broccoli florets
- 2 medium carrots sliced
- 1 small red onion in wedges optional
- 1 tbsp chopped fresh parsley to finish
- Extra lemon wedges to serve
Instructions
- Season chicken with salt, pepper, Italian seasoning, and paprika if using. Add to slow cooker with garlic, lemon zest, lemon juice, broth, and olive oil.
- Cook on Low 3½–4½ hours or High 2–3 hours until chicken reaches 165°F/74°C and is tender.
- Add broccoli, carrots, and onion for the last 30–40 minutes on Low or 20 minutes on High until crisp-tender.
- Taste and adjust salt, pepper, and lemon. Sprinkle parsley. Serve over brown rice, quinoa, or cauliflower rice; spoon juices over and add lemon wedges.
Notes
- For extra brightness, swirl in a teaspoon of lemon zest at the end.
- Prefer thicker sauce? Reduce uncovered on High 10–15 minutes or whisk in a small cornstarch slurry and simmer briefly.
- Add baby spinach during the final 2–3 minutes to wilt.
- Leftovers keep up to 3 days; add a squeeze of lemon after reheating to refresh flavors.
