Ingredients

  • Boneless skinless chicken breasts or thighs – 1 lb (450 g)
  • Olive oil or butter – 1 tbsp
  • Garlic, minced – 3 cloves
  • Smoked paprika – ½ tsp
  • Black pepper – ½ tsp
  • Low-sodium chicken broth – 3½ cups (840 ml)
  • BBQ sauce (sweet-smoky style) – ½ cup (120 ml)
  • Milk or half-and-half – ¾ cup (180 ml)
  • Soy sauce – 1 tbsp
  • Instant ramen noodles (discard seasoning packets) – 2 packs
  • Cornstarch – 1 tbsp
  • Water – 2 tbsp
  • Optional finish (recommended)
  • Green onions, sliced
  • Cheddar or smoked gouda, small handful

Instructions

  1. Heat olive oil or butter in a large pot over medium heat. Add chicken, smoked paprika, and black pepper. Sear 3–4 minutes per side until lightly golden.
  2. Add garlic and cook 30 seconds until fragrant. Pour in chicken broth, BBQ sauce, soy sauce, and milk or half-and-half. Stir well.
  3. Bring to a gentle simmer. Cover and cook 12–15 minutes until the chicken is fully cooked. Remove chicken, shred with two forks, and return to the pot.
  4. Add ramen noodles directly to the pot. Simmer uncovered 3–4 minutes, stirring gently, until noodles are tender.
  5. Stir cornstarch and water together. Add to the soup and simmer 1–2 minutes until glossy and lightly thickened.
  6. Taste and adjust seasoning. Serve hot with green onions and cheese for extra smoky depth.
