Ingredients
- Boneless skinless chicken breasts or thighs – 1 lb (450 g)

- Low-sodium chicken broth – 3½ cups (840 ml)
- BBQ sauce (sweet-smoky style) – ½ cup (120 ml)
- Milk or half-and-half – ¾ cup (180 ml)
- Soy sauce – 1 tbsp
- Instant ramen noodles (discard seasoning packets) – 2 packs
- Cornstarch – 1 tbsp
- Water – 2 tbsp
- Optional finish (recommended)
- Green onions, sliced
- Cheddar or smoked gouda, small handful
Instructions
- Heat olive oil or butter in a large pot over medium heat. Add chicken, smoked paprika, and black pepper. Sear 3–4 minutes per side until lightly golden.
- Add garlic and cook 30 seconds until fragrant. Pour in chicken broth, BBQ sauce, soy sauce, and milk or half-and-half. Stir well.
- Bring to a gentle simmer. Cover and cook 12–15 minutes until the chicken is fully cooked. Remove chicken, shred with two forks, and return to the pot.
- Add ramen noodles directly to the pot. Simmer uncovered 3–4 minutes, stirring gently, until noodles are tender.
- Stir cornstarch and water together. Add to the soup and simmer 1–2 minutes until glossy and lightly thickened.
- Taste and adjust seasoning. Serve hot with green onions and cheese for extra smoky depth.
