Ingredients

- 2 lbs green cabbage, shredded
- 1 lb red cabbage, shredded
- 4 cups shredded carrots
- 1 cup Greek yogurt
- 1 cup light mayo
- ½ cup apple cider vinegar
- ⅓ cup sugar or honey
- 1 tsp Dijon mustard
- Salt & pepper to taste
- Optional: 1 cup fresh blueberries and diced strawberries for red-blue accents
Instructions
- Combine shredded cabbages and carrots in a huge bowl
- In a separate bowl, whisk yogurt, mayo, vinegar, sugar, mustard, salt, and pepper until smooth
- Taste dressing, adjust sugar or vinegar as needed
- Just before serving, pour dressing over vegetables and fold gently
- Fold in berries (if using) for patriotic color
- Chill for 30 minutes, then stir again, and serve cold
