Description

A creamy, tangy, and colorful coleslaw recipe made to serve a crowd—perfect for patriotic celebrations and summer BBQs.


Ingredients

Scale
  • 2 lbs green cabbage, shredded
  • 1 lb red cabbage, shredded
  • 4 cups shredded carrots
  • 1 cup Greek yogurt
  • 1 cup light mayo
  • ½ cup apple cider vinegar
  • ⅓ cup sugar or honey
  • 1 tsp Dijon mustard
  • Salt & pepper to taste
  • Optional: 1 cup fresh blueberries and diced strawberries for red-blue accents

Instructions

  1. Combine shredded cabbages and carrots in a huge bowl
  2. In a separate bowl, whisk yogurt, mayo, vinegar, sugar, mustard, salt, and pepper until smooth
  3. Taste dressing, adjust sugar or vinegar as needed
  4. Just before serving, pour dressing over vegetables and fold gently
  5. Fold in berries (if using) for patriotic color
  6. Chill for 30 minutes, then stir again, and serve cold
