Ingredients
- Boneless skinless chicken thighs or breasts – 1 lb (450 g)
- Neutral oil or butter – 1 tbsp
- Yellow onion, thinly sliced – ½ medium
- Garlic, minced – 3 cloves
- Mild curry powder – 1½ tsp
- Low-sodium chicken broth – 3 cups (720 ml)
- Coconut milk (full-fat or light) – 1 cup (240 ml)
- Soy sauce – 1½ tbsp
- Instant ramen noodles (discard seasoning packets) – 2 packs
- Fresh lime juice – 1 tbsp
Optional Toppings
- Soft-boiled eggs
- Green onions, sliced
- Chili oil or chili crisp
- Fresh cilantro
Instructions
- Heat oil or butter in a pot over medium heat.
- Add onion and cook 2–3 minutes until softened.
- Stir in garlic and curry powder. Cook 30 seconds until fragrant.
- Add chicken, broth, coconut milk, and soy sauce. Stir gently.
- Bring to a simmer and cook 15 minutes, until chicken is tender.
- Remove chicken, shred, and return to the pot.
- Add ramen noodles and cook 3–4 minutes until tender.
- Stir in lime juice. Taste and adjust seasoning if needed.
- Serve hot with desired toppings.
Notes
- Use mild curry powder for a family-friendly flavor.
- Add extra broth when reheating, as noodles absorb liquid.
- Lime juice should be added at the end to keep the broth fresh.
