- 1 tablespoon chipotle in adobo, minced (or 1 teaspoon chipotle powder)
- 1 tablespoon lime juice
- 2 garlic cloves, minced
- 3 cups cooked rice (white, brown, or cilantro-lime rice)
- 2 cups corn (frozen or canned, drained)
- Elote mix:
- 1/3 cup mayonnaise
- 1/4 cup sour cream (or Greek yogurt)
- 1/2 cup crumbled cotija (or feta)
- 1 tablespoon lime juice
- 1/2 teaspoon chili powder
- 1/4 teaspoon salt
- Toppings:
- 1/2 cup chopped cilantro
- 1/2 cup diced red onion
- 1 avocado sliced (optional)

Instructions
- Whisk chipotle in adobo, lime juice, garlic, chili powder, smoked paprika, cumin, salt, and black pepper.
- Toss chicken in the chipotle seasoning mix.
- Heat oil in a large skillet over medium-high heat.
- Cook chicken 7 to 9 minutes, stirring occasionally, until browned and cooked through to 165°F.
- Add corn to the skillet and cook 2 to 3 minutes until hot and lightly blistered.
- Reduce heat to low.
- Stir mayonnaise, sour cream, cotija, lime juice, chili powder, and salt, then stir into the corn until creamy.
- Warm rice and divide into bowls.
- Top with chipotle chicken, creamy elote corn, cilantro, red onion, avocado (optional), and extra lime.
