- 4 medium sweet potatoes
- 1 lb boneless skinless chicken breast or thighs, diced (or shredded rotisserie chicken for faster prep)
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp onion powder
- Salt
- Pepper
- 1 (4 oz) can diced green chiles
- 1/2 cup chicken broth
- 1/2 cup sour cream (or Greek yogurt)
- 1 cup shredded Monterey Jack or cheddar
- Optional: lime wedges
- Optional: cilantro
- Optional: hot sauce
Instructions
- Pierce sweet potatoes with a fork. Microwave 6–10 minutes total (flip halfway) until soft.
- While potatoes cook, heat olive oil in a skillet over medium-high heat. Add chicken, cumin, onion powder, salt, and pepper. Cook 6–8 minutes until cooked through.
- Add diced green chiles and chicken broth. Simmer 2 minutes. Reduce heat to low and stir in sour cream (or Greek yogurt).
- Stir in half the shredded cheese until melted.
- Split sweet potatoes open and fluff inside with a fork. Spoon creamy chicken mixture on top. Sprinkle remaining cheese over each potato.
- Optional: Broil 2 minutes to melt and lightly brown the cheese.
- Serve with lime, cilantro, and hot sauce if desired.
