- Boneless skinless chicken breasts or thighs 1½ lb (680 g)
- Olive oil 1 tbsp
- Yellow onion finely chopped 1 medium
- Garlic cloves minced 4
- Low-sodium chicken broth 5 cups (1.2 L)
- Dried oregano 1 tsp
- Dried thyme ½ tsp
- Kosher salt 1 tsp (adjust to taste)
- Black pepper ½ tsp
- Heavy cream or half-and-half ¾ cup (180 ml)
- Fresh lemon juice 2 tbsp
- Fresh spinach 3 cups
- Optional but recommended
- Crumbled feta cheese
- Fresh dill or parsley
- Extra lemon wedges
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion and cook 3–4 minutes until softened.
- Stir in the minced garlic and cook 30 seconds until fragrant.
- Add the chicken breasts or thighs to the pot and season with salt, black pepper, oregano, and thyme.
- Pour in the chicken broth and bring to a gentle simmer.
- Cover and cook 15–18 minutes, until the chicken is fully cooked and tender.
- Remove the chicken and shred it using two forks. Return shredded chicken to the pot.
- Reduce heat to low and stir in the heavy cream or half-and-half.
- Add fresh lemon juice and stir gently to brighten the broth.
- Stir in the spinach and cook 2–3 minutes until just wilted.
- Taste and adjust seasoning if needed.
- Serve warm, topped with feta, fresh herbs, and extra lemon wedges if desired.
Notes
- For best flavor, use fresh lemon juice and add it at the end to preserve brightness
- Avoid boiling after adding cream to maintain a smooth texture.
- Leftovers may thicken slightly; add a splash of broth when reheating.
