Ingredients

  • Boneless skinless chicken breasts or thighs 1½ lb (680 g)
  • Olive oil 1 tbsp
  • Yellow onion finely chopped 1 medium
  • Garlic cloves minced 4
  • Low-sodium chicken broth 5 cups (1.2 L)
  • Dried oregano 1 tsp
  • Dried thyme ½ tsp
  • Kosher salt 1 tsp (adjust to taste)
  • Black pepper ½ tsp
  • Heavy cream or half-and-half ¾ cup (180 ml)
  • Fresh lemon juice 2 tbsp
  • Fresh spinach 3 cups
  • Optional but recommended
  • Crumbled feta cheese
  • Fresh dill or parsley
  • Extra lemon wedges

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook 3–4 minutes until softened.
  3. Stir in the minced garlic and cook 30 seconds until fragrant.
  4. Add the chicken breasts or thighs to the pot and season with salt, black pepper, oregano, and thyme.
  5. Pour in the chicken broth and bring to a gentle simmer.
  6. Cover and cook 15–18 minutes, until the chicken is fully cooked and tender.
  7. Remove the chicken and shred it using two forks. Return shredded chicken to the pot.
  8. Reduce heat to low and stir in the heavy cream or half-and-half.
  9. Add fresh lemon juice and stir gently to brighten the broth.
  10. Stir in the spinach and cook 2–3 minutes until just wilted.
  11. Taste and adjust seasoning if needed.
  12. Serve warm, topped with feta, fresh herbs, and extra lemon wedges if desired.

Notes

  • For best flavor, use fresh lemon juice and add it at the end to preserve brightness
  • Avoid boiling after adding cream to maintain a smooth texture.
  • Leftovers may thicken slightly; add a splash of broth when reheating.
