The Dough:
- 4 cups bread flour
- 1 packet (2¼ teaspoons) active dry yeast
- 1½ teaspoons salt
- 1 tablespoon sugar
- 1¼ cups warm water
Boiling:
- 3 quarts water
- 2 tablespoons baking soda
Topping:
- 1½ cups shredded Asiago cheese
- Optional: sesame seeds, garlic powder, or poppy seeds
Instructions
- Prepare the Dough: In a large bowl, mix flour, yeast, salt, and sugar. Slowly add warm water until a dough forms. Knead for 8–10 minutes until smooth.
- Proof the Dough: Cover with a damp cloth and let rise for 1 hour, or until doubled in size.
- Shape the Bagels: Divide into 8 pieces. Roll into balls, poke holes in the center, and shape into rings.
- Boil the Bagels: Preheat oven to 425°F (220°C). Boil water with baking soda. Boil each bagel for 1 minute per side.
- Add the Cheese: Transfer to parchment-lined baking sheet. Top generously with shredded Asiago.
- Bake: Bake for 20–25 minutes until golden and the cheese is bubbly.
- Cool and Serve: Cool on a rack and enjoy warm or save for later.
