The Dough:

  • 4 cups bread flour
  • 1 packet (2¼ teaspoons) active dry yeast
  • 1½ teaspoons salt
  • 1 tablespoon sugar
  • 1¼ cups warm water

Boiling:

  • 3 quarts water
  • 2 tablespoons baking soda

Topping:

  • 1½ cups shredded Asiago cheese
  • Optional: sesame seeds, garlic powder, or poppy seeds

Instructions

  1. Prepare the Dough: In a large bowl, mix flour, yeast, salt, and sugar. Slowly add warm water until a dough forms. Knead for 8–10 minutes until smooth.
  2. Proof the Dough: Cover with a damp cloth and let rise for 1 hour, or until doubled in size.
  3. Shape the Bagels: Divide into 8 pieces. Roll into balls, poke holes in the center, and shape into rings.
  4. Boil the Bagels: Preheat oven to 425°F (220°C). Boil water with baking soda. Boil each bagel for 1 minute per side.
  5. Add the Cheese: Transfer to parchment-lined baking sheet. Top generously with shredded Asiago.
  6. Bake: Bake for 20–25 minutes until golden and the cheese is bubbly.
  7. Cool and Serve: Cool on a rack and enjoy warm or save for later.
